If you’ve been following along with me on Instagram, you may know that I started a journey to build my own marketing consulting business in November. My exit from the corporate marketing world has given me the ability to create my own schedule and work from home. Although this may sound leisurely and fun, I very quickly realized that this does not mean taking midday workout classes and meeting friends for ladies-who-lunch dates. You just don’t have enough time in a week! I’ve learned a lot about how to best manage my time with techniques like time batching, color-coding my Google Calendar and always getting dressed for the day (more on all of that to come!).

I also take advantage of being able to cook myself a quick, healthy meal in the middle of the day in my own kitchen (the luxury!). I make this ahi tuna and greek salad combo at least three days a week, especially now that I’m trying to eat healthily and tone up for our annual trip to LA in March. In all honesty, I used to eat this salad with a piece of cooked salmon from Whole Foods all the time at my desk jobs, so you could easily make this meal ahead of time and pack it if that suits your schedule better. my work-from-home lunch: ahi tuna steak with greek salad 

  1.  Put 1/2 tablespoon of sesame seeds on a plate, and coat tuna on both sides with the seeds, plus salt and pepper.
  2. Heat olive oil in a skillet on low-medium heat, and sear tuna for 3-4 minutes per side, depending on how rare you prefer.
  3. While the tuna cooks, slice 3-4 campari tomatoes and 2 mini cucumbers into bite-sized pieces.
  4. Add a handful of chickpeas, crumbled feta and black olives to the salad. There are lots of other things you could add to this salad if you want—such as orange pieces, capers, white beans or nectarines.
  5. Season with fresh basil, salt and pepper to taste.
  6. Remove tuna from heat, slice and serve with soy sauce for dipping.
  7. Add lemon on top of the entire meal to finish. Voilá!
